Soya Bean Patties
Recipe from "Living in the 21st Century with Diabetes"
Ingredients
½ cup dried (100grams) or 1 cup of cooked soy beans (200grams)
1 medium finely chopped carrot (100grams)
1 medium finely chopped onion (100grams)
2 chopped sticks celery (150grams)
2 crushed cloves garlic (6grams)
½ cup plain wholemeal flour (70grams)
1½ tsp curry powder
¼ cup dried bread crumbs (30grams)
2 extra tabsp of dried bread crumbs (20grams)
2 tabsp mono/polyunsaturated oil (40ml)
Method
· Prepare cooked soya beans by bringing to the boil, letting stand for 1 hour, drain and then recook until soft. Otherwise use tinned drained, washed soy beans.
· Mash or blend soya beans with carrot, onion, celery and garlic.
· Mix in flour, curry powder, salt and bread crumbs.
· Form into 12 patties and dip in bread crumbs.
· Shallow fry in minimum of oil for about 5 minutes on each side.
· Serve hot or cold.
