Savoury Spinach
Recipe from "Living in the 21st Century with Diabetes"
Ingredients
2 bunches spinach ready for cooking (400grams)
1 small chopped onion (75grams)
2 slices lean chopped ham or turkey bacon (50grams)
1 tsp mono/polyunsaturated oil (8 grams)
Method
* Steam or microwave spinach for 2 to 3 minutes or until soft.
* Drain and chop.
* Stir-fry onion and ham or turkey bacon in oil.
* Add spinach, stir- fry for 1 minute and serve.
