Smooth Textured Fruit Cake
Ingredients
1 cup mixed fruit (170grams)
20 medium dates (100grams)
1 peeled and finely chopped small apple (100 grams)
1 tsp cinnamon
½ cup boiling water (125 ml)
½ cup low fat milk (125ml)
¼ cup sherry or port (65ml)
2 eggs (100grams)
½ cup mono/polyunsaturated margarine (125grams)
½ cup brown sugar (80grams)
2 cup white self raising flour (260grams)
Method
Boil mixed fruit, dates and apple with cinnamon and water for 3 to 4 minutes.
Blend with milk and sherry until smooth.
Whip margarine and sugar together.
Add eggs to margarine mixture, beating well after each addition.
Beat in fruit mixture.
Fold in flour until mixture is smooth.
Place in a greased 20 cm spring form tin or loaf tin.
Bake at 180oC for 45 minutes or until a skewer comes out clean.
