Thai Noodle Stir Fry
Ingredients
600grams Hokkien noodles (rice noodles if gluten free required)
2 teaspoons oil (16 grams)
1 red capsicum, sliced (140 grams)
1 clove garlic, crushed (3 grams)
2 tablespoons sweet chilli sauce (40ml)
2 teaspoons soy sauce(40ml)
400grams baby bok choy
Method
Place noodles in a large bowl and cover with boiling water. Separate noodles with a fork. Drain.
Heat oil in a wok or frypan and saute capsicum and garlic until soft. Stir through noodles and sauces.
Simmer until ingredients are heated through. Add Bok Choy and stir-fry until just wilts.
