Easy Beef Stir fry
This recipe makes enough for a dinner meal and lunch leftovers
Ingredients
200g of lean beef strips
½ finely sliced onion (48 grams)
½ diced red capsicum (90 grams)
6 sliced mushrooms (84 grams)
1/2 cup sliced green beans (50 grams)
½ cup broccoli flowerets (90 grams)
1 large sliced carrot (180 grams)
4 tbsp soy sauce (80 grams)
2 tbsp oyster sauce (50 grams)
1 can water chestnuts (140 grams)
1/2 cup raw basmati rice (90 grams)
Method
In a wok or pan, fry up the onion in a small amount of water
Add beef and cook until just brown.
Add some soy sauce and oyster sauce and vegetables.
Add drained can of water chestnuts.
Cook until vegetables are just soft.
Meanwhile, cook ½ cup of basmati rice.
Serve half of the stir fry with half of the rice for dinner.
The rest can be taken the next day for lunch.
