Cannellini and Sausage Soup
The family will like this and it will do for 2 to 3 meals.
Ingredients
1 teaspoon unsaturated oil (5 grams)
4 coarsely chopped Chevup sausages (200 grams)
1 finely chopped medium red onion (100 grams)
2 finely sliced sticks of celery (150 grams)
2 finely sliced carrots (200 grams)
2 medium cubed potatoes (200 grams)
2 crushed cloves garlic (6 grams)
1 tablespoon finely chopped fresh thyme
1 teaspoon paprika
2 medium finely chopped tomatoes (200 grams)
6 cups chicken stock
2- 400 gram tins drained and rinsed white cannellini beans (600 grams)
1 cup washed spinach leaves or Zucchini
Method
Stir-fry sausage in oil until crisp in a large non-stick saucepan.
Remove sausage and drain on absorption paper.
Stir fry onion, celery, carrots, potato and garlic for 10 minutes in saucepan.
Add thyme, paprika, tomatoes and chicken stock and simmer until potato is soft.
Add white cannellini beans and spinach or Zucchini.
Simmer for 10 minutes and serve.

Note
This will freeze well if you are a family of 1 or 2.
Variations
Use different sausages or meats and vary the vegetables according to what is on hand. Different canned beans may be used as well or try chick peas.
Tips
Make ahead and just add the spinach or zucchini at the end so it will be nice and fresh.
