Chicken, Mango and Fetta Patties for One
Ingredients
• 125g lean chicken or pork mince (can also use lean beef, turkey)
• 50g canned mango slices, drained well and cut into cubes
• 10g reduced fat feta cheese, cut into cubes
• 1/4 cup spinach leaves, chopped (25g)
• Olive oil spray
Method
• Combine mince, mango, feta and spinach
• Use hands to combine
• Shape into 4 patties
• Spray a non stick pan very lightly with oil
• Cook patties for 3-4 minutes on each side, or until cooked. You will notice the mango caramelises on the outside
• Serve with a green side salad
