Banana Date Muffins
Recipe from "Living in the 21st Century with Diabetes"
Ingredients
2 cups wholemeal self raising flour (280grams)
1/2 tsp bicarbonate of soda (1grams)
3 medium mashed bananas (300grams)
20 medium finely chopped dates (100grams)
1/2 cup orange juice (125ml)
1 egg (50grams)
2 tabsp honey (50ml)
2 tabsp olive oil (40ml)
Method
Mix flour and bicarbonate of soda together.
Blend banana and dates in a kitchen whiz or mash and chop finely.
Mix together banana, dates, orange juice, egg, honey and oil.
Add wet to dry ingredients, mixing only until dampened.
Place in well greased muffin tins.
Bake at 1800 C for 15 to 17 minutes.
Serve warm or reheat in microwave.
These freeze well.
