Mexican Tortilla Sandwich for One
Ingredients
¼ cup pasta sauce (70 grams)
¼ cup kidney beans, drained and rinsed (100 grams)
50 grams corn kernels, drained
2 tsp burrito seasoning mix (10 grams)
Spray olive oil (1.5 grams)
2 tbsp grated low fat cheese (15 grams)
1 corn tortilla (28 grams)
Method
Heat pasta sauce in a saucepan. Add the beans and corn and burrito seasoning mix and coo, stirring for 1-2 minutes.
Spray heated pan lightly with olive oil. Cut tortilla in half. Cook one half of tortilla for 1 min. Top it with the cheese and the bean and corn mixture. Top with other half of tortilla, turn and cook for another 1 min until crisp.
