Sweet Potato, Spinach, Feta and Walnut Salad
Ingredients
2 peeled and diced small sweet potatoes (400grams)
Cinnamon
Nutmeg
Quality Rock Salt
Cracked pepper
2 cups washed spinach leaves (100grams)
8 quartered cherry tomatoes (100grams)
40g cubed low fat feta cheese
6 diced walnut halves (16grams)
Method
Preheat the oven to 200 degrees
In a bowl, mix sweet potato cubes, cinnamon, nutmeg, salt and pepper
Place on baking paper, on a tray and bake until sweet potato softens (approx 30mins) Allow to cool
Combine spinach leaves, cherry tomatoes, low fat fetta and walnut pieces
Add sweet potato and toss salad well before serving
