Chicken, Mango and Fetta Patties
This can be made with minced chicken, turkey, pork or beef. If fresh mango is available it may be used.
Ingredients
500grams lean chicken, pork, beef or turkey
200grams drained and cubed canned mango
40grams cubed reduced fat feta cheese
1 cup finely chopped spinach leaves (30grams)
Olive oil spray
Method
Combine mince, mango, feta and spinach
Use hands to combine
Shape into 8 patties
Spray a non stick pan very lightly with oil
Cook patties for 3-4 minutes on each side, or until cooked. You will notice the mango caramelizes on the outside
Serve with a green side salad
