Meat and Vegetable Patties
Serve with salad
Good Hot or cold in lunches or as a main meal.
These can be frozen
Ingredients
500 grams lean beef or chicken mince
2 small grated carrots (150 grams)
1 small zucchini (100 grams)
3 tablespoons soy honey marinade (gluten free if required) (69 grams)
1 cup bread crumbs (gluten free if require gluten free or low FODMAP)(120 grams)
Method
Mix mince, carrot, zucchini, marinade and bread crumbs together.
Form into 12 small patties.
Cook in a nonstick fry pan over low heat, covering once browned.

Variations
Make this with lean chicken mince or tuna.
Tips
Always use the leanest meat to keep the saturated fat in your diet as low as possible. Lightly covering and steaming these over low heat, helps to keep them moist.
