Fresh Salmon with Pesto
Salmon is high in omega 3's so very nutritious. It will only take 10 minutes to prepare and bake this recipe
Ingredients
2 fresh salmon fillets (480 grams)
2 tablespoons lemon juice (50 ml)
Freshly ground black pepper
2 tablespoons blue cheese (50 grams)
2 tablespoons commercial or homemade pesto sauce (46 grams)
Method
Dry salmon fillets.
Place fillets in a greased baking dish, tucking under thin ends to give the same thickness over all.
Sprinkle fillets with lemon juice and ground black pepper.
Layer a thin layer of pesto over the top of each fillet.
Dot each fillet with 2 teaspoons of blue cheese.
Bake in 180ºC oven for 8 minutes or until just about done.
Don’t over cook or it will be dry.

Variations
This same dish would go well with a firm fish such as Sword fish.
Tips
If portions size is controlled cost can be acceptable. Although it is high in fat, it is a good fat.Serve with fresh asparagus and new mint potatoes. For a light meal, try it with the Fresh Asparagus and Ricotta Slice.
