Savoury Meat Balls
Recipe from "Living in the 21st Century with Diabetes"
Lean mince (500grams)
1 medium grated carrot (100grams)
1 medium finely chopped onion (100grams)
1 egg (50grams) or low cholesterol egg mix
Freshly ground black pepper
1 tsp curry powder
1 teaspoon cumin
2 tabsp fresh or 1 tsp dried tarragon leaves
2 tabsp finely chopped parsley
4 tabsp cornflour (45grams)
2 tabsp mono/polyunsaturated oil (40ml)
· Blend mince, carrot, onion, egg, black pepper, curry powder, cumin, tarragon and parsley together.
· Form into 36 small firm balls and dip in cornflour.
· Heat oil in a nonstick frying pan and cook slowly, turning carefully to brown evenly.
· Drain on absorbent kitchen paper.
· Serve hot or cold.
