Salmon Fillets With Quark And Spinach

Salmon Fillets With Quark And Spinach

A recipe that everyone will rave about
 
Ingredients
4 salmon fillets or steaks (540 grams)
2 cups fish or chicken stock (500 ml)
1 tablespoon light soy sauce (20 ml)
1 tablespoon lime or lemon juice (20ml)
4 tablespoon low fat Quark ricotta cheese (80 grams)
1 teaspoon poppy seed
2 steamed and chopped bunches of Spinach (400 grams raw)
 
Method
Bring stock to the boil in a fry pan that will just fit the salmon.
Add the salmon, return to the boil, cover and turn off the stove.
Leave to poach for 5 to 7 minutes without lifting the lid (you don’t want to overcook the salmon).
Remove and drain on paper towels.
Place a mound of chopped spinach on each plate.
Top with salmon.
Mix soy sauce and lime juice together and pour over salmon.
Blend Quark and poppy seeds and divide dollop on top of salmon. Warm for 30 seconds in microwave

Note
Good accompaniments are snow or sugar peas or spinach.
