Mini Texas Quiches
Ingredients
8 slices shaved leg river gum smoked round ham 240grams)
4 eggs or low cholesterol egg mix (200grmas)
1½ cups non-fat milk (375ml)
Pepper to taste
1 cup grated less than 10% fat cheese (120grams)
3 finely chopped spring onions (42 grams)
½ cup self raising wholemeal flour (70grams)
Method
* Spray with oil and line 6 large Texas Muffin tins with leg ham; reserving 2 slices.
* Beat eggs, milk and pepper together.
* In a separate bowl mix together cheese, onion, 2 slices chopped ham and flour.
* Add egg and milk mixture to flour mixture, folding until well blended.
* Pour mixture into ham lined muffin tins and bake in an 180ºC oven for 35 to 40 minutes.
* Serve hot or cold with salad.
* Perfect to take on a picnic as easy to eat in the fingers.
