Nougat
Ingredients
1 kg unblanched almonds
3 egg whites (100 grams)
1 cup caster sugar (160 grams)
2 cups creamed honey (500 grams)
8 sheets of rice paper
Extra egg white
Method
Divide almonds between 2 trays and bake in a very slow,100?C oven for 40 minutes to crisp.
Beat egg whites until stiff but not dry.
Slowly beat in sugar and then honey.
Transfer to a heavy based saucepan.
Cook over low heat stirring constantly for 1 to 1hour and 10 minutes.
The constant stirring results in a creamy thick texture. This must be stirred all the time or it will catch and burn and not be thick and creamy! It is worth the effort.
Near the end of cooking, it may darken slightly and will form a soft ball when a little is dropped in cold water. This should be about 110-115 ?C if you have a thermometer.
If cooking over gas, use the small plate and turn the flame to low. After about 10 to 15 minutes, place a heat mat between the saucepan and the flame.
Place 4 pieces of rice paper on counter to form a rectangle.
Stick together by brushing with a little egg white on seams, keeping the joins as straight and flat as possible.
Make a second rectangle using the other 4 pieces of rice paper.
Note rice paper can be found in European speciality stores. Usually 12 sheets come in a package.
When the nougat has reached temperature and time, remove from heat, stir in the almonds and spread on to one of the set of joined sheets. An extra pair of hands is handy at this stage to scrape it out of the saucepan and spread it on the rice paper.
Smooth and ease the nougat to the edges with a wooden spoon.
Top with the other piece of joined rice paper, pressing down firmly.
Leave to cool for 1 to 2 hours and then cut with a very sharp knife into 100 pieces.
Store in a sealed container in the freezer.

Note
Although this has a significant amount of fat, it is mostly the good mono and polyunsaturated ones. It is also gluten free.
