Poached Salmon
Ingredients
4 salmon steaks (600 grams)
2 cups fish or chicken stock (500 ml)
2 tabsp low sodium soy sauce (40 ml)
2 teaspoons canola oil (10 grams)
2 tabsp finely sliced spring onions on the long diagonal (10 grams)
Method
Bring stock to the boil in a fry pan that will just fit the salmon.
Cut each salmon steak on the diagonal.
Add to the stock, return to the boil, cover and turn off the stove.
Leave to poach for 5 to 7 minutes without lifting the lid (you don’t want to overcook the salmon).
Remove and drain on paper towels.
If desired place a mound of Three Vegetable Mash on each plate.
Top with 2 diagonal pieces of fish, pour over sauce and sprinkle with spring onions.
Good accompaniments are snow or sugar peas or spinach.
