Spinach Cocktail Bites
Serve warm as a savoury for afternoon tea or at a cocktail party
Ingredients
2-250 packages of frozen drained chopped spinach (330 grams)
1 tabsp unsaturated margarine (20 gram)
3 eggs (150 grams)
1 cup self raising white flour (130 grams)
1 tabsp grained mustard (20 grams)
¼ teaspoon ground chilli
Salt to taste
¼ cup chopped chives (25 grams)
2 cups grated less than 7% fat cheese (240grams)
2 tabsp Parmesan cheese (18 grams)
Method
· Preheat oven to 180°C.
· Squeeze thawed spinach until all excess juice is drained.
· Melt margarine in a 23 by 34 cm Swiss roll tray in the oven.
· Beat eggs, flour, mustard, ground chilli, and salt together in a large mixing bowl.
· Fold in chives, grated cheese and squeezed spinach.
· Spread melted margarine over the hot tray with a pastry brush.
· Spread mixture on top of melted margarine.
· Sprinkle with grated Parmesan cheese.
· Bake in 180°C oven for 35 to 40 minutes or until the middle is set when tested with a knife.
· Allow to cool and then cut into 35 bite size square.

Tips
These freeze well. To reheat frozen bites, pop them in the oven at 180°C for 15 minutes.
