Unsaturated Shortbread
Ingredients
2 2/3 cups plain white flour (350grams)
2/3 cup ground rice (135grams)
2/3 castor sugar (150grams)
1 cup mono/polyunsaturated margarine (250grams)
Method
·Sift flour, rice and sugar into bowl.
·Cut in margarine using 2 knives until the size of small peas and then work with hands until will hold together. make use a mixer but only mix until just sticks together.
·Roll out on a floured board or between 2 sheets of baking paper until 1/2 cm thick.
·Cut with a 4 1/2 cm biscuit cutter. Re-roll when necessary.
·Place on ungreased baking sheet. Bake in 150*C oven for 15 - 20 minutes or until pale brown and dry.
·Remove from oven and dust with castor sugar.
·Store in a sealed container. Freeze well
