Saffron
Saffron is made from the flower of the crocus sativus plant, a relative of the iris. It is known for its yellow dye and aromatic flavour. It can be found in gourmet and Asian stores. The threads should be soaked in hot milk or water for 15 to 20 minutes to infuse flavours before using. Although it is very expensive, a few threads go a long way. It can used in risotto, paella, bouillabaisse, seafood, mayonnaise, creme caramel and rice pudding. Turmeric is an inexpensive poor substitute.
