Chocolate Almond Wafers
Excellent to serve with coffee
Ingredients
2 egg whites (65ml)
1/2 cup caster sugar (110grams)
1 tablespoon Melted mono/polyunsaturated margarine (20grams)
1/3-cup plain wholemeal flour (45grams)
1 tablespoon Cocoa powder (10grams)
2/3 cup slivered almonds (112grams)
Method
Whisk egg whites until fluffy.
Whisk in sugar and melted margarine until smooth.
Mix well together flour and cocoa powder.
Fold into egg white mixture.
Fold in almonds.
Cover baking trays with baking paper. Draw a 20cm circle on each.
Divide mixture in two and spread inside circle. Make sure to divide almonds evenly.
Bake in 170’C for 20 to 25 minutes or until brown around the edge and firm.
Remove from the oven and as soon as cool enough to handle, cut each round into 12 wedges. Use a pizza cutter if available, otherwise a sharp knife.
Store in an airtight container.
