Lycopene Cardamon Soup
Lycopene is an antioxidant found in tomatoes
Ingredients
1-420 gram can crushed tomatoes
4 medium peeled and finely chopped carrots (400 grams)
1 medium finely chopped onion (100 grams)
1 litre chicken stock (gluten free if required)
10 cardamon pods or 1 teaspoon cardamon powder
1/2-cup low fat natural yoghurt (125 ml)
Chopped mint or parsley
Method
Sieve tomatoes to remove skin and seed. This improves the flavour but may be omitted.
Bring tomatoes, carrots and onions to the boil with stock.
Crush cardamon pods and tie in cheesecloth and add to soup.
Reduce heat and simmer for about 20 minutes or until carrot is cooked.
Remove from stove and leave for flavour to penetrate for a 15 minutes.
Remove cardamon pods and then puree using a blender or food processor.
Serve with a swirl of yoghurt and garnish with mint or parsley.
