Warm Swordfish Salad
Ingredients
500 grams swordfish steaks
Marinade
3 tabsp lemon or lime juice (60ml)
1 tabsp olive oil (20ml)
1 finely chopped stalk of lemon grass
1/2 tsp coriander
1 tsp cumin
1/2 tsp paprika
Salad
2 cups mixed lettuce (100grams)
1 cup green seedless grapes (170grams)
1 cup cherry tomatoes (170grams)
1 medium sliced avocado (200grams)
1 small finely sliced red onion (75grams)
2 tsp olive oil (10ml)
1 tabsp lemon or lime juice (20ml)
Method
* Cut fish into 3 cm strips.
* Marinate fish for 30 to 40 minutes in lemon juice, oil, lemon grass, coriander, cumin and paprika.
* Barbecue or grill until golden brown.
* Divide mixed lettuces between plates. Top with grapes, tomatoes, avocado, sliced onion.
* Mix oil, lemon juice, together and sprinkle over salad,
* Place warm steaks on top and serve.
