Bran muffins
High GI Muffins are great for between meal snacks
Ingredients
1½ cups natural unprocessed bran (75g)
1¼ cup whole meal flour (170g)
¼ cup sugar (55g) or equivalent substitute
3 tsp baking powder (6g)
½ tsp bicarbonate of soda (1g)
½ cup sultanas (85g)
1 egg (50g)
¼ cup mono/polyunsaturated oil (65g)
2 tabsp treacle (50g)
1 medium peeled, cored and chopped apple (120g)
½ cup non fat natural yoghurt (125ml)
½ cup non fat milk (125ml)
Method
* Mix bran, flour, sugar, baking powder, bicarbonate of soda and sultanas together.
* Blend egg, oil, treacle and apple in food processor or mixing bowl.
* Add yoghurt and milk to wet ingredients.
* Mix wet into dry ingredients until just moistened. Do not over mix.
* Place in greased small patty tins or use paper liners.
* Bake in 2000C oven for 20 to 25 minutes.
* They freeze beautifully. Reheat in microwave for 2 minutes on Medium.
