Grilled eggplant
Recipe from "Living in the 21st Century with Diabetes"
Ingredients
1 medium eggplant (300grams)
2 tsp Worcestershire sauce (10grams)
2 tsp olive oil (10grams)
2 tsp lemon juice (10grams)
Method
* Peel and slice eggplant in 1cm slices.
* Place in salted water for 1 hour to extract juices. Dry on kitchen paper.
* Mix Worcestershire sauce, olive oil and lemon juice together for marinade.
* Brush marinade on one side of eggplant.
* Place under griller and grill for about 4 to 5 minutes or until beginning brown.
* Turn, brush with remaining marinade and grill for a further 3 - 5 minutes.
* Serve with a Fresh Tomato Salsa.
