Fish fillet puff
Recipe from "Living in the 21st Century with Diabetes"
Ingredients
500grams of white flesh fish such as Schnapper or King Clip
1 egg white (30grams)
1 tabsp of melted mono/polyunsaturated margarine (20grams)
2 tabsp of slivered almonds (20grams)
Method
* Place the fish in a lightly oiled casserole dish.
* Beat egg white and fold in melted margarine.
* Cover the fish with egg white mixture and sprinkle with slivered almonds.
* Bake in 180(c oven for 15 minutes until brown on top and fish is opaque.
* Simple but good for entertaining.
