Chicken Ginger Kebabs
Recipe from "Living in the 21st Century with Diabetes"
Ingredients
Boned skinless chicken breast (500grams)
2 tsp finely chopped green ginger
2 tabsp salt reduced soy sauce (gluten free if required) (40ml)
2 tabsp lemon juice (40ml)
3 tsp Worcestershire sauce (gluten free if required) (15ml)
1 tbsp brown sugar (13grams)
1 tsp dry mustard (2grams)
Method
* Remove all fat, from chicken breast and cut into 2 cm pieces.
* Place in a bowl.
* Combine green ginger, soy sauce, lemon juice, Worcestershire sauce, sugar and mustard and pour over chicken.
* Leave to marinate for 4 to 6 hours in the refrigerator, stirring occasionally.
* Place 12 wooden skewers in a pan and pour over boiling water.
* Leave to steep and absorb moisture while chicken is marinating.
* This will prevent them burning while being grilled.
* Thread chicken on wooden skewers, allowing 3 per person.
* Grill on barbecue or oven griller , turning frequently and basting with remaining marinade.
* Serve on a bed of Saffron rice or rice with added toasted sunflowers.
