Moussaka
Recipe from "Living in the 21st Century with Diabetes"
Ingredients
2 medium Grilled Eggplant (600grams)
Lean topside mince (300grams)
2 medium finely chopped onions (200grams)
2 cloves crushed garlic (6grams)
1 tsp low sodium beef stock powder (8grams)
1 bay leaf
3 medium finely chopped tomatoes (300grams)
Monounsaturated nonstick spray
1 1/2 cups Bechamel Sauce
1/4 cup parmesan cheese (60grams)
Method
* Prepare Grilled Eggplant
* Brown mince, onion and garlic in a microwave dish in microwave or in a nonstick pan for about 5 minutes.
* Add beef stock powder, bay leaf and tomato. Cook for a further 5 minutes.
* Reduce heat in microwave and cook for 30 minutes or cover and simmer on stove or 30 minutes.
* Spray a large 25 cm oven /microwave dish with nonstick spray.
* Place 1/2 of eggplant in a layer on the bottom. Top with 1/2 the mince.
* Finish with rest of eggplant and mince.
* Prepare Bechamel Sauce adding 1/4 cup parmesan cheese.
* Top with Bechamel sauce and sprinkle with the rest of the parmesan cheese.
* Bake in a 2000C oven for 20 to 25 minutes or until slightly brown and bubbly.

Note
