Quick chicken & chips
Don't buy fried chicken and chips or burgers for tea
Ingredients
1 small cooked chicken (1kg) (400grams skinned and boned)
4 medium potatoes (400grams)
Herbs and seasonings eg Cajun spice, turmeric, garlic, cumin
mono/polyunsaturated oil spray.
4 cups prepared mixed salad greens or coleslaw without dressing (200grams)
Method
* Turn the oven to 220( C as soon as possible to preheat.
* Slice potatoes with skin on.
* Microwave or boil for 6 minutes.
* Season and place on a greased baking sheet.
* Spray with oil and bake in a 220(C oven for 15 minutes or until brown.
* Prepare salad in the bowl, ready to add a commercial no oil dressing or prepare Honey Orange Dressing by mixing 1 tablespoon each of orange juice, honey, balsamic vinegar, and olive oil. Add 1 teaspoon of grain mustard or to taste.
* Section chicken into 8 pieces, discarding skin.
* Serve chicken, potatoes and salad with dressing. Allow 2 pieces of chicken per serve.
