Chilled cream of tomato soup
Ingredients
1 can condensed tomato soup (440grams)
1 small carton low fat yoghurt (200grams)
1 cup water (250ml)
1 tsp horseradish relish
1 finely chopped spring onion
1/4 cup medium dry sherry (65ml)
Finely chopped parsley
Method
* Place tomato soup, yoghurt, water, horseradish relish, spring onion and sherry in blender and blend until smooth.
* Chill well.
* Serve in small dishes garnished with finely chopped parsley.
