Spicy Gherkin dip with crisp salad
| Ingredients |
1 cup skim cottage cheese (250 grams) 1/4 cup lemon juice (65ml) 1 tsp mustard (5grams) 1 tabsp capers (optional) 1 small grated onion (50grams) 2 tabsp chopped gherkin (40grams) Tabasco Sauce to taste Pepper and salt to taste Celery sticks, small mushrooms, carrot sticks, raw cauliflower pieces, small Lebanese cucumber sticks with skin. |

| Method |
* Blend cottage cheese, lemon juice, mustard, capers, onion, gherkins, Tabasco Sauce and salt and pepper to taste. * Pour into bowl and decorate with paprika. * Place bowl in centre of tray and surround with lettuce cups filled with crisp salad. * Variations- add chopped pineapple or apple. Use spring onion instead of dry onion. |
