Butterscotch sauce
Ingredients
2 tabsp mono/polyunsaturated margarine (40grams)
1 cup brown sugar (160grams)
1 cup boiling water (250ml )
2 tabsp cornflour (20grams)
2 tabsp cold water (40ml)
2 tabsp Grand Marnier liqueur, rum or brandy (40ml)
Method
* Melt margarine in casserole.
* Add sugar and microwave on high for 1 minute, stopping to stir once.
* Add boiling water, stir until dissolved.
* Combine cornflour and cold water and add to hot mixture.
* Microwave on high for 2 - 3 minutes, stirring occasionally until thick.
* Add liqueur to taste.
* Excellent served with Steamed Carrot Pudding at Christmas.
