Thai fish salad
Recipe from "Living in the 21st Century with Diabetes"
Ingredients
500grams fish cut into strips
Lettuce
2 medium apples, sliced (276 grams)
1 carrot, grated (140 grams)
1 small beetroot, grated (83 grams)
Dressing
2 tablespoons sugar (32 grams)
2 tablespoons lemon or lime juice (40mls)
4 tablespoons of fish sauce (80 mls)
Dash of chilli sauce if desired
Method
* Crumb the fish.
* Place on a greased baking tray, spray with oil and bake for 15 minutes.
* Serve on a bed of lettuce with the apple, carrot & beetroot
* Top with Thai dressing
