Baked Ratatouille
Recipe from "Living in the 21st Century with Diabetes"
Ingredients
1 crushed clove garlic (3grams)
1 medium thinly sliced capsicum rings (150grams)
1 medium sliced unpeeled eggplant (300grams)
1 medium sliced unpeeled zucchini (175grams)
1 medium thinly sliced onion (100grams)
1 tsp mono/polyunsaturated oil (5grams)
1 tabsp water (20ml)
1 tsp oregano
1 medium chopped tomato (100grams)
1 cup grated less than 10% fat cheese (120grams)
Method
Stir- fry prepared garlic, capsicum, eggplant, zucchini and onion in a non-stick pan with oil and water.
Add oregano and tomato.
Continue cooking uncovered for 5 - 10 minutes.
Place in a casserole dish, sprinkle with cheese.
Bake in 180°C oven for about 20 minutes or until cheese melts.
