Rice Pudding
Recipe from "Living in the 21st Century with Diabetes"
Ingredients
1/4 cup uncooked rice (50grams)
2 cups non-fat fat milk (500ml)
2 tablespoons sugar (36grams)
Nutmeg (optional)
Method
Place rice in a lightly greased casserole dish. Mix together milk and sugar and add to rice. Sprinkle nutmeg on surface. Cook in a 165 °C oven for 1 1/2 hours, stirring occasionally but be careful not to break the skin.
