Oat Cakes
Recipe from "Living in the 21st Century with Diabetes"
Ingredients
1½ cup Traditional Oatmeal (150grams)
1½ cups plain wholemeal flour (210grams)
¼ cup sugar (55grams) or equivalent substitute
½ tsp bicarbonate of soda (1grams)
½ cup mono/polyunsaturated margarine (125grams)
3 to 4 tabsp ice cold water (approximately) (85ml)
Method
Combine oatmeal, flour, sugar and soda in a mixing bowl.
Cut margarine into flour mixture until the size of peas.
Add ice water until it will stick together while pressing with a fork.
Roll out 1/2 cm thick on a slightly floured board.
Using a 5cm to 6cm biscuit cutter, cut into rounds.
Place on greased baking sheet.
Bake in a 180 0 C oven for 12 to 15 minutes, until crisp and golden.
Remove and place on rack to cool.
Store in an air tight container.
Serve by themselves or with a small spread of margarine or with low fat cheese.
