Hoisin Chicken Rice Paper Rolls
Ingredients
600g skinless chicken breast
4tbsp hoi sin sauce (80grams)
1 thinly sliced red capsicum (180grams)
1/2 thinly sliced cucumber (250grams)
1 large thinly sliced carrot (140grams)
1 cup thinly sliced Chinese cabbage (140grams)
4tbsp lime juice (80mls)
1tsp fish sauce (10mls)
2tbso honey (50grams)
12 x 22cm rice paper rolls (24grams)
Method
Preheat oven to 180 degrees C
Coat chicken breasts with hoi sin sauce. Wrap in alfoil and bake in the oven for approximately 30mins, or until cooked through
Meanwhile, in a bowl, combine all vegetables, lime juice, fish sauce and honey and mix well
When chicken is cooked, allow to cool slightly and then slice thinly
One at a time, dip rice paper rolls in a bowl of warm water and lay flat on a tea towel to dry
Divide vegetable and chicken into 12 portions each and place one portion of chicken and one portion or vegetable mix in the centre of the rice paper roll, leaving room at the bottom to fold up
Rollup to enclose filling and serve chilled

Note
Can be served with soya sauce or sweet chili sauce. Soy sauce is the low kilojoule and low sugar alternative
