Stuffed Baked Potato
Ingredients
1 large potato (200 grams)
1/4 pack well drained frozen spinach
1/2 small chopped onion (60 grams)
1/2 400gram can drained chickpeas
30 grams grated low fat cheese
Lettuce (20 grams)
5 x slices cucumber (30 grams)
4 x snow peas (15 grams)
1 x sliced small carrot (100 grams)
Method
Bake 1 large potato until soft. Scoop out flesh and mix with 1/4 pkt well drained frozen spinach, 1/2 small chopped onion and 1/2 can drained chickpeas. Top with grated cheese and grill or microwave until heated through. Serve with a mixed green salad and carrot sticks.
