Barramundi Salsa
Recipe from "Living in the 21st Century with Diabetes"
Ingredients
600 grams Barramundi or white fleshed fish
4 tabsp. commercial medium Salsa (100grams)
sliced lemon
Baking paper
Method
· Cut fish into 4 equal size serving pieces and pat dry with kitchen paper.
· Place each serve on a 20 by 30 cm piece of baking paper.
· Spread 1 tabsp of Salsa on each.
· Top with 2 slices of lemon .
· Seal fish in baking paper by forming packages.
· Place on a baking tray and bake at 180°C for 10 minutes.
· Serve with fresh vegetables and mashed potatoes
