Salmon Fried Rice
This recipe makes enough for 2 serves. Serve one for dinner and one for lunch or dinner the next day.
Ingredients
Olive oil spray (1.5 grams)
1 small diced onion (48 grams)
1 diced red capsicum (140 grams)
1 large diced carrot (180 grams)
1 cup frozen peas (160 grams)
4 tbsp soy sauce (40ml)
100 gram tin flaked pink salmon
1 packet 2 minute microwave brown rice
Method
Heat a wok or fry pan to medium heat and spray with one spray of olive oil spray.
Cook diced onion until soft
Add diced red capsicum, carrot, and frozen peas
Add soy sauce, cook until vegetables soft
Add salmon
Stir to combine
Meanwhile, microwave the 2 minute rice pack
Add rice and stir to combine
Serve half for dinner and save half for lunch tomorrow

Variations
Tinned flavoured tuna can be used in place of salmon for a variety of flavour. Try seeded mustard or sweet chili.
