Grilled Steak and Sweet Potato Salad
Ingredients
Small piece sweet potato (100 grams)
1 cup spinach leaves (40 grams)
6 small cubes low fat feta (30 grams)
1 small diced tomato (100 grams)
4 walnut halves (8 grams)
150 grams lean steak eg rump, fillet
Method
Preheat oven 180 degrees celcius
Wrap sweet potato in foil and bake 30mins or until cooked
Meanwhile prepare salad. Combine 1 cup spinach leaves, 6 small cubes low fat feta, 1 small diced tomato, 4 walnuts
Heat a non stick pan to medium heat
Spray with one spray olive oil spray
Grill steak to your liking
When the sweet potato is cooked, dice into small cubes
Dice up and mix through the salad
