Lamb Souvlaki Wraps for One
You may double the recipe and pre-marinate and cook the lamb to make a fresh wrap up the following day.
Ingredients
125 grams lean lamb strips
Marinade
1 tabsp lemon juice (20 ml)
1/4 teaspoon olive oil (1 gram)
1/4 tabsp chopped fresh herbs- e.g.- oregano, basil and thyme
1/2 finely chopped cloves garlic (2 grams)
1 pita wraps (gluten free if required)(55grams)
1/4 finely sliced Spanish onion (30 grams)
1/4 finely sliced Roma tomato (25 grams)
15 grams low fat finely cubed feta
1/4 cup shredded lettuce (20 grams)
Method
Marinate lamb strips for 30 minutes in lemon juice, oil, herbs and garlic.
Grill lamb for 5 minutes or until no longer pink.
Heat wrap in microwave for 1 minute.
Divide lamb between wraps and top with Spanish onion, sliced tomato, feta and lettuce.
Roll up firmly, wrap with a strip of greaseproof paper and tie with string.
Place on a plate and serve with additional salad if desired.
