Moroccan Chickpea Salad for One
Ingredients
1 cup drained and rinsed chickpeas (200 grams)
½ cup peeled and grated carrot (55 grams)
2 tablespoons sultanas (15 grams)
1 tablespoons fresh mint leaves (12 grams)
1 tablespoon lemon juice (20 mls)
1 small minced garlic clove (3 grams)
½ teaspoon ground cumin (5 grams)
½ teaspoon paprika (5 grams)
salt and ground black pepper
Method
In a large mixing or serving bowl, combine chickpeas, grated carrots, sultanas and mint. Stir.
In a separate bowel whisk together lemon juice, garlic, cumin, and paprika. Pour over chickpea mixture and stir thoroughly to combine. Salt and pepper to taste.
Serve at room temperature or a little chilled.
