Tropical Prawn Salad for One
Ingredients
150 grams cooked peeled prawns, tails on
1 slice peeled, chopped rockmelon (50 grams)
1 slice peeled and chopped watermelon (75 grams)
4 sliced snow peas (20 grams)
¼ cup diced red capsicum (30 grams)
Fresh picked mint leaves
Fresh picked coriander leaves
2 tablespoons lime juice (40 ml)
1 teaspoon sunflower oil (5 grams)
¼ teaspoon fish sauce (3 ml)
Method
Place prawns, rockmelon, watermelon, snow peas, capsicum, mint and coriander leaves in a bowl.
Whisk together lime juice, oil, and fish sauce make the dressing. Pour over salad and toss to combine.
Serve chilled.
