Four Bean Mix Stir Fry for One
For an extra kick, add a teaspoon of Sweet Chili Sauce, but remember to add the extra kilojoules/calories.
Ingredients
¼ cup diced carrot (35grams)
¼ cup diced red capsicum (30grams)
¼ cup diced zucchini (30grams)
2 x sliced mushrooms (28grams)
1 x sliced spring onion (15grams)
¼ cup frozen peas (40grams)
½ can 4 Bean Mix, drained (126grams)
2 tbsp soy sauce (40ml)
1 x egg (44grams)
Method
Stir fry, carrot, capsicum, zucchini, mushroom, spring onion and frozen peas in 1 to2 teaspoons of water In a wok. Cook until vegetables soften and water is mostly gone.
Add 4 Bean Mix and soy sauce and stir until just cooked.
In the meantime, beat the egg in a cup until yolk and white are mixed.
Move vegetable and bean mix to side of wok. Add egg to free side.
Stir egg while it scrambles.
When the egg is nearly cooked, mix the vegetable and bean mix in with the egg and finish cooking the egg thoroughly.
Serve immediately
