Tuna Pasta for One
** For a variety of flavours vary the tuna flavour you buy. Try Seeded Mustard, Lemon and Black Pepper, Indian Curry or Sweet chilli. Feel free to use the low fat tuna varieties, but also remember that the normal fat varieties contain good omega 3 fats and very little saturated fat.
Ingredients
½ cup uncooked spiral or penne pasta (gluten free if required) (60grams)
1 can flavoured tuna (95grams) ¼ cup diced red capsicum (30grams)
¼ cup diced zucchini (30grams)
2 x sliced mushrooms (28grams)
¼ cup diced carrot (35grams)
¼ cup diced red onion (30grams)
Method
Prepare pasta according to packet instructions
In a wok, add vegetables and a small amount of water. Cook vegetables until just blanched
Add tuna, with oil, to wok and cook stirring until heated through
Drain cooked pasta, add to wok, and toss until well combined
Serve immediately or can be put in the fridge and served cold on hotter days.

Note
Can be made gluten free by using gluten free pasta spirals.
