Low FODMAP Beef Curry
Nutrition information does not include rice or mango chutney.
Ingredients
2cm piece of green ginger (10 grams)
1 teaspoon ground cumin
2 tablespoons beef curry powder (20 grams)
˝ teaspoon chilli powder (optional)
1 teaspoon turmeric
1 tablespoon unsaturated oil (20 ml)
500 grams lean cubed blade or round steak
1 teaspoon salt (5 grams)
1 medium tomato (100 grams)
1 large potato (200 grams)
2 tablespoons chopped chive tops
Method
Sauté ginger, cumin, curry powder, chilli powder and turmeric with oil in pan.
Cook and stir for 3 to 4 minutes until a curry paste has formed.
Add cubed steak and salt. Cover and cook on low for 10 minutes.
Add tomato and potato and continue to cook until soft and tender.
Garnish with chopped chives and serve with rice and Mango chutney
