Chicken and Apple Salad

Chicken and Apple Salad

Ingredients

600g skinless chicken breasts
¾ cup diced cucumber (90grams)
1 medium sliced apple eg Fuji (140grams)
4 chopped walnuts (8grams)
¼ diced avocado (28grams)
½ cup diced celery (50grams)
2 sliced spring onions (24grams)
3 cups mixed lettuce (150grams)
4 tabsp balsamic vinegar (60ml)

Method

Preheat the oven to 180 º C
Wrap the chicken breasts in alfoil, and bake for approximately 30mins, or until cooked
Allow to cool slightly
Meanwhile, combine apple, walnuts and all vegetables
Chop chicken into small pieces, and add to salad
Top with balsamic vinegar and toss well
