TUNA CHEESE CORN MELTS
Quick and easy from ingredients in your cupboard.
1 cup drained flaked tuna (100 grams)
1/2 cup grated reduced fat cheese (60 grams)
2 tablespoons creamed corn (50 grams)
2 split and toasted English muffins (70 grams)
Mix flaked tuna with grated cheese and creamed corn.
Divide mixture between 4 halves of toasted muffins.
Grill for 5 to 8 minutes or until cheese is melted and starts to bubble.
Serve as an after school snack.

Fix this mixture ahead and refrigerate. It will then just take a minute to prepare if you have hungry children.
Add chopped capsicum or a little spring onion for added flavour. Use Salmon or chopped chicken instead of tuna.
